Spicy Eggs 'N Fries

Fries: Cut 2 small potatoes into wedges and put in a sealable tiffin box. Add 2 tsp vinegar, little chili powder, garlic powder, ginger powder, cumin powder, turmeric powder, pepper powder, salt. Close lid and shake to mix. Add lots of oil to pan and fry in medium high heat.

Eggs: Medium heat oil in pan. Saute chopped small onion, green chili. Add little salt to prevent burning. Add two eggs. Sprinkle salt. Flip eggs over. Add finely chopped cilantro. Flip back and place on plate.

Peanut Brittle 'Chikki'

Peanut Brittle 'Chikki'

Medium high heat mix 3/4 cup water, 1 cup sugar, 1/2 cup golden corn syrup. Stir continuously till dark brown and tastes right. Add 1 tbsp margarine. Mix well. Remove from heat and quickly add 1/2 tsp baking soda, 1 tsp vanilla. Mix well. Quickly add enough peanuts and mix and coat well. Transfer onto warm baking sheets or a warm pizza tray. Spread as thin as possible. When cooled break into pieces. Can be stored in fridge or out.

Chicken Fried Rice

Chicken Fried Rice.

Boil chopped carrots, green beans, broccoli stems (can also add peas, corn). Saute chopped onions, garlic, green peppers, green chilies.

Add boiled veggies to saute. Add cooked chicken pieces and mix on medium heat. Add cooked white rice and cook on high heat till crackles and rice browns a little at bottom. Mix and serve.

(Can also add raisins and blanched almonds to give sweetness and crunch)

Spicy Omelet Bread

Spicy Omelet Bread 

Fry small onion, 5 cloves garlic, 2 green chillies. When slightly browned remove and add to 2 beaten eggs. Add to this 2 sprigs of cilantro. Mix in a high speed mixer.

Cut two slices of bread into 8 pieces. Dip each piece in egg mixture and coat properly. Add lots of oil to wide pan and preheat to medium heat. Add pieces and fry. Make sure not to burn. Turn multiple times.When done arrange on plate and decorate with tomato sauce.

Pepperoni Pizza

Classic Pepperoni Pizza For dough 1.5 cups flour, 1 envelope pizza yeast, 3/4 tsp salt, 1.5 tsp sugar, 2/3 cup warm water, 3 tbsp olive oil, enough dried basil to flavour dough. Mix everything well. Apply thin coating of olive oil to pizza pan. Spread dough in circle. Cut into perfect circle by inverting a plate over the dough and cutting excess dough with a knife. Flatten excess dough and add to center of spread dough. Spread pizza sauce with bottom of spoon. Sprinkle pizza cheese blend. Drizzle olive oil. Place pepperoni slices. Preheat oven to 425. Bake on top rack till crust is browned and cheese is bubbly. To get crispy bottom crust don't forget to spread olive oil on pan before spreading dough.
